Each type of amylase breaks down the molecules of the corresponding type of sugar: lactase breaks down lactose (milk sugar), maltase breaks down maltose (malt sugar), and sucrase breaks down sucrose (cane and beet sugar). √ Proteases: they are involved in protein digestion and break proteins down into simple amino acids. Proteases, like other digestive secretions, are responsible for the absence of parasites in the small intestine. A deficiency in proteases (notably trypsin, chymotrypsin and carboxypeptidase) therefore increases the risk of intestinal infection. √ Lipases: they are involved, in the same way as bile, in the digestion of lipids. A deficiency in pancreatic lipases leads to poor absorption of lipids and fat-soluble vitamins. The action of pancreatin is supported by the presence of betaine, pepsin A and papain.
