Fermented papaya, the fruit of the papaya tree, Carica papaya, results from long lacto-fermentation (between 3 and 9 months) of papaya pulp. Its properties differ from "non-fermented" papaya, which contains an enzyme, "papain", that is no longer found once fermented. Made famous by Pope John Paul II, who suffered from Parkinson's disease, to whom Professor of virology Luc Montagnier suggested at the time taking fermented papaya, combined with other antioxidants, in order to relieve his Parkinson's symptoms. This story caused significant controversy in the media and medical circles. Faced with the observation of an improvement in the pope's state of health during his public appearances, without it being possible to formally link this to the intake of fermented papaya, science took on the task of consolidating knowledge of its benefits. It was Japanese scientists who observed that, in the Philippines, consumers of this fermented fruit lived longer. They elucidated the chemical composition of fermented papaya, which has multiplied components such as essential amino acids (around fifteen), B vitamins, minerals (calcium, potassium, magnesium, iron), trace elements (copper, zinc), vitamin C, and sugar. No more fibre or enzymes. It is this maximised biochemical richness that gives it its effects on the body. In the 1990s, this preparation was consumed as an "anti-ageing" supplement and, long before that, Vasco da Gama referred to it as "the tree of eternal youth". Thanks to the lactic fermentation process and the nutritional richness of the Carica papaya fruit, the resulting powder is an "antioxidant bomb": this is not due to its intrinsic power (no ORAC value) but to its ability to induce and stimulate our endogenous antioxidant defences by stimulating the production of two major enzymes, glutathione and superoxide dismutase (SOD), proteins that are ineffective when consumed orally since they break down into amino acids…
