WHAT IS QUERCETIN? Quercetin is considered the queen of flavonoids, a family of plant metabolites with a polyphenolic structure, widely favoured in traditional medicine. Numerous clinical and epidemiological studies have tested the potential beneficial effects of these molecules on health. Scientists have thus studied the effects of quercetin on the cardiovascular and immune systems. It is also recognised as having a biochemical involvement in antioxidant and allergic processes, however no health claim is yet recognised by EFSA.
